Today is kind of a ho-hum day. Nothing too exciting going on. Just normal daily stuff. But as much as I like to write about something (anything!) I thought I'd share what I just got going in the crock pot for our dinner. It's easy, inexpensive, and yummy! Most of the ingredients are things that we typically have around (normal pantry & freezer stuff) so when buying for the week, you might only have to pick up an item or two for this meal. I double the recipe.
1 can kidney beans, rinsed and drained
1 can diced tomatoes, undrained
1 can condensed beef broth, undiluted (or water & bullion, or broth saved from a roast)
8 oz. kielbasa sausage (Polish sausage), cut lengthwise into halves, then crosswise into 1/2 inch thick slices (typically, this comes in a 16 oz package, so why not double the recipe?)
1 large baking potato, cut into 1/2 inch cubes
1 medium green bell pepper, diced (I buy these when they're 25 cents a piece in season during the summer, chop them, and freeze them in baggies for dishes like this)
1 medium onion, diced
1 teaspoon dried oregano leaves
1/2 teaspoon sugar
1 to 2 teaspoons ground cumin
Combine all ingredients, except cumin, in slow cooker. Cover and cook on LOW for 8 hours or on HIGH for 4 hours. Stir in cumin; serve. Makes 6 to 7 servings (typically 6 in our home, with 3 adults and 3 children--this is why I double it--we like leftovers!)
