My favorite Winter "Salad"

Samuel asked me yesterday why I take pictures of food.  :)  Because recipes are so much better with photos, of course!  This time of year, fresh veggies for a salad are hard to come by... well, those that taste the way they're supposed to are hard to come by, anyway!  I just finished the last late-planted tomato my mom had been sheltering from the cold.  It was great on my seasoned chevre topped flat bread.  Anyhow, back to this recipe!  This is a mostly in-season hot salad that I love! 

1 leek
5 green onions
5 mushrooms
3 cloves of garlic
5 sprigs of asparagus (if you can get it.  This doesn't have it because I can't get it anymore.)
pine nuts or sunflower seeds (about a handful)
feta cheese

First, chop the veggies and add them to the pan.  I'm using a cast iron skillet coated with canola oil spray, but I've used a plain stainless steel pan with no oil and that works too.  There's enough water in the veggies to keep them from sticking.  Cook down, stirring frequently.
 After the veggies have cooked down, add in your nuts/seeds and let it cook a minute or so more.
Place mixture on plate, and top with feta cheese.  Very filling and flavorful!  :)
